Broccoli thief...

My little "R" was definitely the inspiration for this dish. Three of her top favorite foods are elbow macaroni, chicken and broccoli. I thought I'd be a little creative. I passed by some mazithra cheese in the deli department of the grocery store and I had a thought. It turned out to be a good one. Little "R" couldn't wait to try it. She ate over half the broccoli out of the bowl as I was trying to take pictures. I couldn't keep her away. I don't know what I did right with her, but she loves her vegetables. We haven't encountered one she doesn't like yet.

The even better news...the hubs loved it too. He did however have enough self control to wait until after the photo shoot.

I couldn't help but include the picture I captured as little "R" was sneaking some broccoli. Her little hand ended up in over half the pictures.



MIZITHRA LEMON PASTA
(Mindi Original)

8 oz. whole wheat elbow macaroni (or pasta of choice); cooked al dente
2 large, boneless, skinless chicken breasts; cut into 1/2” pieces
2 t. olive oil
4 C. broccoli, steamed
Zest of 2 lemons
Juice of 2 lemons
½ C. butter
1 C. grated mizithra cheese
salt & pepper

1. In a large skilled heat olive oil over high heat. Add the chicken and sauté until cooked through; season with salt and pepper while cooking.
2. Add lemon zest, lemon juice and butter. Continue to sauté until the butter just starts to turn brown.
3. Add the cooked pasta, steamed broccoli and toss to combine all ingredients.
4. Add the mizithra cheese then season with salt & pepper.
5. Serve immediately.
6. Serves 4 adults.
