My husbands request...

I came up with this recipe a couple years ago, at my husbands request. It's one of his favorite Italian dishes when we eat out. I figured it couldn't be too hard...I was right.

Needless to say...he loves it!


EASY CHICKEN PARMESAN
(Mindi Original)

4 boneless skinless chicken breasts, pounded to ¼” thick (I use 2 of the larger Costco chicken breast, sliced in half and then pounded.)
1 C. Panko bread crumbs
2 t. Italian seasoning
1 t. kosher salt
1 t. black pepper
1 egg or 2 egg whites whipped
4 thick slices of parmesan or mozzarella cheese
2 C. marinara sauce (I just use Prego)
4 servings of your favorite pasta (any variety works), cooked

1. Heat 2 T. olive or vegetable oil over medium/high heat in a large skillet.
2. Combine the bread crumbs, Italian seasoning, salt & pepper.
3. Rinse and dry the chicken breasts. Dredge in the whipped eggs, then in the bread crumb mixture.
4. Cook in the heated skilled for about 3-4 minutes per side or until the chicken is cooked through.
5. Place a slice of cheese on each breast and pop the skillet under the broiler to melt the cheese.
6. Heat the marinara sauce in a sauce pan over the stove.
7. Serve chicken with pasta, placing ½ C. of marinara sauce over the dish.
